Country Sausage and Potato Skillet

An easy, filling supper made in one skillet with simple ingredients.

Ingredients

  • 1 pound smoked sausage, sliced
  • 4 medium potatoes, peeled or unpeeled and cut into small pieces
  • 1 medium onion, chopped
  • 2 tablespoons butter or cooking oil
  • ½ teaspoon garlic powder, optional
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese

Directions

  1. Heat the butter or oil in a large skillet over medium heat.
  2. Add the potatoes and onion. Season with garlic powder, salt, and pepper.
  3. Cover and cook for 12 to 15 minutes, stirring now and then, until the potatoes begin to soften.
  4. Add the sliced sausage and cook uncovered for another 8 to 10 minutes. Stir often so the potatoes brown without sticking.
  5. When the potatoes are tender and the sausage is hot, sprinkle the cheese over the top.
  6. Cover for 2 or 3 minutes, until the cheese melts.
  7. Serve hot.
